Buttery Light Fruitcake

Ingredients

1 1/4 cups all-purpose flour

1/2 cup Butter

1/2 cup sugar

3 Eggs

1/2 teaspoon baking powder

1/2 teaspoon salt

2 1/2 cups candied fruit

1/2 cup pineapple chunks

1/2 cup cherries

1 cup golden raisins

1 cup slivered almonds

How to make

STEP 1

Preheat oven to 300°F. Grease the pan flore then set aside.

STEP 2

Combine flour, baking powder and salt in bowl and mix well. Add candied fruits, raisins and almonds. Mix together to coat fruit with dry ingredients.

STEP 3

Beat butter in another bowl until creamy then add sugar. Continue beating until mixture is light and fluffy. Add 1 egg at a time, beating well after each addition.

STEP 4

Slowly blend in fruit mixture until well mixed.

STEP 5

Pour into prepared pan. Put into the Oven for Bake 85-95 minutes or until toothpick inserted into center and comes out clean. After getting Cool completely, remove from pan.
